•In a large mixing bowl, add the cubed butter and whisk until slightly creamy. Add the white sugar and light brown sugar, then whisk together until well combined.
•Add the egg + egg yolk, vanilla extract. Whisk until fully incorporated.
•Add baking powder, baking soda, salt and mix. Add flour & gently mix until just combined, then add chocolate chips and mix everything together but do not overmix.
•Preheat oven to 185C.
Grease the donut tins well to ensure the cookies release easily. Alternatively, line the tins with strips of baking paper for easier removal.
•Fill each donut-shaped cavity halfway or just slightly over half full, leaving enough room for the cookie dough to spread while baking.
•Bake for 12–15 minutes, or until the tops are golden brown and the edges are set.
•Now melt the chocolate bar using double broiler method and coat one side of cookie with melted chocolate and keep it aside to set. Carefully remove them and enjoy ✨
Store any extra dough balls in an airtight container or freezer bag and freeze for later. Whenever a cookie craving hits, bake straight from frozen.
